Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Not a bad dinner stop off of I-80. No wait on a Friday night. Food was good. It seemed slightly overpriced...but then again it was tasty and great for off the interstate. Service was a little slow...and a couple minor mistakes on the order...but the staff was friendly.

3.0 Stars. We stopped for lunch while passing through R.S. Not particularly inviting from the restaurant exterior; in fact, probably wouldn't have stopped if not for a couple of positive reviews. But once inside the ambiance improved a bit and the service was good. The chips and salsa (and warm refried beans) were very good. We ordered cheese enchiladas suisas and veggie fajitas. Both were okay, but neither were outstanding. One of those 'okay' restaurants; solid, but nothing to rave about given our one dining experience. Few to Average Number of Veggie options.

I agree with the others that the pricing is steep for a town which obviously doesn't get too many visitors, but as it goes, it wasn't too expensive when compared to other restaurants of similar quality along the East Coast. The servers didn't seem to really understand English too well, which was kind of awkward when ordering drinks and what not. The food portions were large, though, so sharing is definitely a good thing. I liked the food here.. I haven't had Mexican more than a handful of times in my life, though, so I don't know how accurate my account is ..

The price is pretty steep for a little restaurant in a dead town in middle of nowhere. BUT, in terms of authenticity and quality it's great. Large portions, so might consider sharing if u r not too hungry. Overall, good experience.

Suprisingly pretty authentic. Great enchilada selection and excellent taxis del carbon. Some of the other reviews I noticed had comlpaints about the waiter not speaking english but that is a good thing it makes the place legit. Oh and my waiter did speak english very well.

meh. i've been to the Los Cabos in Big Piney, which is tiny, but i remember the food being excellent. yesterday's meal in Rock Springs, not so much. i ordered the chicken burrito- which i asked if the chicken was shredded and the waiter said yes. i got chicken tenderloins in a tortilla with sauce. no beans in it, no cheese in it. weird. not what i expected. flavor was good though. also, i thought it was weird that they don't serve fish tacos. i probably won't be back.

traveling through town on our way back to the s.f. bay area, we stopped at los cabos for dinner. we were unbelievably impressed with the meal. the mexican rice and the refried beans were perfect. i ordered enchiladas suizas w/chicken and the chicken was scrumptiously seasoned, tender and delicious. my husband had the same, only w/ground beef and he was delighted with his meal. the service, friendliness and attentiveness were excellent. too bad we won't be back.
